水を振る｜Shaking Water
もう5年ほど前になるでしょうか。 とある職人に会う事になった時の話です。 何か手土産をと思いつつ、私も職人としてその方と向き合いたかったので、バーテンダーとして何かカクテルをと思ったのですが、その方はお酒を飲まれないとの事でした。 その方は精密な金属加工の職人で、飛行機の部品から人が使える小物にまで及びます。その作品は海外の有名アーティスト達にもファンが多い凄い方です。また知らない世界ですが、渓流釣りの名人の名をお持ちだとか。 招かれた先で、何かバーテンダーが職人として 出来る事は何だろうと考えました。
変わった飲み方のカクテル、ニコラシカ｜Unique drinking cocktail, Nicolashka
口の中で混ぜると言う手法で飲むカクテルがあります。知らずに出されると、これは全く飲み方が分からない、、、それがニコラシカと言うカクテルです。小さなリキュールグラスにブランデーを注ぎ、グラスに蓋をする様に薄いレモンスライスを乗せ、その上にお砂糖を盛ります。 バーの入り口には良く盛り塩が、されている事がありますが、ニコラシカは決して洋風の盛り塩ではありません（笑） 飲み方の一例として、レモンでお砂糖を包み、実の部分をお砂糖と一緒にかぶりつきます。 少し噛んでから、グラスのブランデーを一気に口に含むみます。 口の中で全てを混ぜ合わせると、レモンの酸味がお砂糖と混じり、そこにブランデーが合わさって何とも言えない美味しさになります。
There are cocktails that you drink by mixing them in your mouth. If you don't know this, you have no idea how to drink it ... it's a cocktail called Nicolashka. Pour brandy into a small liqueur glass, place a thin slice of lemon on top of the glass and cover it with piled sugar. The bar entrance is often filled with piled salt (Japanese old custom for wishing luck), but Nicolashka is not a Western-style piled salt. (Laughs) As an example of how you drink this, first, wrap sugar with lemon and dig in. After chewing a little, put the glass of brandy in your mouth. When you mix everything in your mouth, the sourness of the lemon mixes with the sugar, and the brandy mixes with it to make it an indescribable taste.
お店の前のガジュマルの木｜Gajumaru tree in front of the Bar
お店の前に大きなガジュマルの木があります。 暖かい地方、沖縄などによく生えている木で、根っこの様な土から出た部分が複雑に絡み合っている事から別名「絞め殺しの木」とも言われています。 私がこのガジュマルに興味を持ったのは、もう12年くらい前の事でした。 暑い夏の事、五反田周辺の山手通りを、大崎駅方面に歩いていると、広い歩道の真ん中に巨大な木がありました。その大きさ、記憶を辿ると、約3メートルそして、幅も木の高さと同じくらい広がっていた様に思います。
There is a big Gajumaru tree in front of the bar. It is a tree that often grows in warm regions, Okinawa, etc., and the part that comes out of soil like the root is complicatedly intertwined. so called “tree of strangulation”. It was about 12 years ago I was interested in this tree. During the hot summer, walking along Yamate-dori near Gotanda towards Osaki Station, the size of the wide sidewalk, about 3 meters in memory, I think it was as wide as the height of a tree.
モクテル？パスティス？｜Mocktail? Pastis?
ミクソロジー、クラフト、 バーシーンでは沢山の新しい言葉が踊る。 殆どが、昔からオーセンティックバーで普通だった事象に、焦点を当てて流行らせられた言葉だ。 お酒を飲まない、飲めないお客様は、昔からバーにはいて、珍しい事ではありません。 フロリダ、シャーリーテンプルはよく出来たノンアルコールカクテルで、他にもシンデレラや、アルコール無しのフルーツカクテルなどいくらでもあります。 また、ウィスキーの水割りもバーテンダーはカクテルと考えます。 そんな中で、バーにある唯一フェイクカクテルと言って良いのが、ただカクテルグラスに水を注いだだけのフェイクマティーニ。 オリーブは添えるが、液体は何も混ぜないただの水。 これもバー文化の一つ。
Bar Blue Reefの名前の由来｜Origin of the name, Bar Blue Reef
よく聞かれるので、書いてみようと思います（笑） ブルーリーフは日本語で「青い珊瑚礁」の事です。サーフィンが好きだから？松田聖子さんが好きだから？と聞かれます。 どちらも好きですが、店名の由来では有りません。
I'm often asked, so I'll explain it to you :) Blue Reef is "blue coral reef" in Japanese. Because I like surfing? and/or I like Seiko Matsuda (name of her hit song) ? everybody asked. I like both, but not the origin of the name of bar.
月曜日だから元気の出る一杯を｜A drink giving you full of energy just because it is Monday
お正月も終わり、やっと日常が戻りつつある今日この頃。 仕事始まりの月曜日は、憂鬱な方も多いのかも知れません。だからこそ意外と月曜日は、お客様が多くいらっしゃる時があります。（もちろん静かな月曜日も有るので、なかなか読めませんが） これぞまさに、近所のバーの良さであります。 なんとなく飲みたくなった時、ふらっと寄れるのが、家の近くのバー。 今宵もバーの明かりに吸い寄せられて、訪れる人々が乾杯を交わすのかも知れません。 週の始まりの月曜日は、1週間を乗り切るための、元気の出る一杯を。
New Year is over, and nowadays, everyday life is finally back to normal. On the first Monday of work, many people may be depressed. That's why there are surprisingly many customers on Monday. (Of course, there are quiet Mondays, so it's hard to say…) This is exactly the goodness of the bar in the neighborhood. When you want to drink somehow, you can stop by at the bar at your neighborhood. Tonight, you'll be sucked into the lights of the bar and visitors may have a toast. On the first Monday of the week, a refreshing drink to get through the week.
