水を振る｜Shaking Water
もう5年ほど前になるでしょうか。 とある職人に会う事になった時の話です。 何か手土産をと思いつつ、私も職人としてその方と向き合いたかったので、バーテンダーとして何かカクテルをと思ったのですが、その方はお酒を飲まれないとの事でした。 その方は精密な金属加工の職人で、飛行機の部品から人が使える小物にまで及びます。その作品は海外の有名アーティスト達にもファンが多い凄い方です。また知らない世界ですが、渓流釣りの名人の名をお持ちだとか。 招かれた先で、何かバーテンダーが職人として 出来る事は何だろうと考えました。

The taste changes depending on the shake
よく若い頃、シェークの練習としてやったのが、市販のオレンジジュースを振ると言うものでした。ただ冷蔵庫から出してきたジュースをグラスに注ぐより、シェーカーに氷を入れて降った方がよく冷え、何より空気が入って味わいがとてもまろやかになります。ふと、そんな事を思い出し、職人であり、渓流釣りの名人に、シェークで美味しい水を届けてみようという案を思いつきます。 これは中々グッドアイデアだと思いつつ、苦難の始まりでした。 毎日お水を何杯もシェークします。飲んでいるとすぐにお腹いっぱいになってしまいます。振れば味が変わる事は、既にわかっていました。そして空気を含んだ冷たいお水は、確かに美味しい。 しかし、何かが違う。美味しいけど、本当に美味しいお水という感動がない。。それから2ヶ月程、毎日、水をいろいろな振り方をして試し、毎日お腹いっぱいになっていました。 そもそも本当に美味しいお水って何だろう？

Rather than pouring the juice from the refrigerator into a glass, it is better to put the ice in a shaker and cool down, and above all the air will enter and the taste will be very mellow. Suddenly remembering that, I came up with a plan to deliver delicious water by shaking to craftsmen and masters of mountain stream fishing. This was the beginning of hardship, thinking it was a good idea. Shake many glasses of water every day. If you are drinking, you will be full quickly. I already knew that shaking would change the taste. And cold water with air is definitely delicious. But something is different. Delicious but not really impressive. . Water that exists in nature
自分は何を目指して、美味しい水を作ろうとしていたのだろう。20年のシェーカーの技術を使って水を美味しくする？突然、その事に疑問を感じました。そして、今までやってきた事と全く違う発想で水を振ってみたら、美味しい水になるのでは無いかという仮説が生まれました。 職人の本を読んだ時に、渓流釣りのシーンで、釣りは自然と一体になると言うような事が書かれていて、職人は真っ暗な山の中で岩上に寝て世界と一体になるのだと言う。 よく考えたら、金属だって、水だって、元々自然にあるもの。自然と一体になってみたら良いのでは無いだろうか。 雨が山に降り、土に染み込み、何年もかけて岩清水となって川に流れだす。そのはじめの水。 冷たくはあっても、水は流れ続ける。そして岩清水は、やがて上流で激しい流れとなるが、染み出たばかりの時はゆっくりと流れている。 冷凍庫から出した氷はしばらく放置する。 溶け始めるまでその氷は使わない。そしてシェークも極々ゆっくり滑らかに、ゆっくりと流れる岩清水の様に。 そして出来上がった『私の美味しい水』は、職人にも受け入れてもらう事ができ、招かれた席で沢山、振る舞う事が出来ました。

And if you shake the water with a completely different idea from what you have done so far, the hypothesis was born that it might be delicious water. When I read the artisan's book, it was written in a mountain stream fishing scene that fishing was integrated with nature, and the artisan was lying on a rock in a dark mountain and united with the world.
If you think about it, metals and water are things that naturally exist. Wouldn't it be nice to be united with nature? Rain falls on the mountains, soaks in the soil, and over many years becomes Iwashimizu "water trickling from rocks" and flows into the river. The first water. Even though it is cold, the water keeps flowing. Iwashimizu eventually becomes a violent stream upstream, but flows slowly when it has just begun to seep. Leave the ice from the freezer for a while. Do not use the ice until it begins to melt. And the shake is very slow and smooth, like the slowly flowing like Iwashimizu. And the finished "My Delicious Water" was accepted by the craftsmen, and I was able to act a lot in the invited seats.
